We are out of normal breakfast foods, so I had to improvise.

Last tablespoon of bacon grease Stick of butter 3/4 cup of flour Salt Pepper Fennel seeds Thyme Basil

Not sure if the kids will eat it on toast, but I thought it was pretty good.

The fennel seeds came off a bit strong.

I wouldn’t make it every time either, but it sounds nice. Reminds me of grilled cheese sandwiches. I have also made garlic bread that way with buttered sliced bread, garlic, and Italian seasoning.

OMFG GRILLED CHEESE SANDWICHES those were the best. Years later I found a restaurant that made a great Welsh Rarebit and it was an interesting variation, unfortunately they later changed the recipe.

I had to look it up. I could make a cheddar bechamel with lager, a bit of mustard, paprika, Worcestershire sauce. Not sure what else… I could put it on Texas toast.

Wait, this is for kids? It’s always a little dicey cooking with alcohol for kids. I was once making vermicelli with onions and peas for friends when I realized I should have asked them if it was OK to serve their kids a sauce that was flavored with white wine.

My kids are big, but I was sure that cooking removed most of the alcohol. I just checked, and it looks like the sauce would be about 2% alcoholic.

I could get some non alcoholic beer. I’m looking for taste and not booze.

Yeah I also heard that cooking removed most of the alcohol, but some religions are strictly against consuming any amount of alcohol. Luckily my friends weren’t that strict.

Wow, that could have been a fiasco. Glad your friends were accommodating.
