This is more or less what we threw together
Sauce - All blended in a food processor:
- Approx 1 jar of roasted red peppers
- 2 tbsp tomato paste
- 2 heaping tbsp whipped cream cheese
- 1 cup chicken stock
- dash cayenne pepper + garlic salt + pepper + oregano + fresh basil to taste
Saute quarter of an onion and 1 red bell pepper until soft, then add pre-cooked shredded chicken, sauce, and spinach. Cook until chicken is warmed and spinach wilted. Serve over noodles of choice (we did it over some chickpea noodles)
This looks like a soup I’ve seen once or twice.

It was very good! If we were to change anything I thought added just a bit more “spice” / kick to it would have been great. Otherwise it was top notch.
Just a bit of “spice and everything nice[1]” to make it better; y’all are great cooks!
On the other hand, I tend to be heavy handed when experimenting with recipes when it comes to adding spices, either too much or too little.
